this might be an impossible task i know but would it be at all possible if i bought myself all the parts to build a game boy dmg from scratch (perhaps incorporating some of the more interesting mods i find also)

Yes of course, you can do it! For me, the only hard part (except finding all the electronics) is for integrating the software, I really don't know how you can do it. Maybe with a flash storage with the bootrom on it.
