First you have Gameboy video out through a PC. Could be much more simplified with a microcontroller allowing portability! (Thinking of Arduino)
Also on the site is the Devboy which links your Gameboy to your PC for all sorts of neat stuff!
These are really fantastic projects for Gameboy development!

Indeed, that's nice. I would believe more in using an FPGA though. That way you could really shrink the size and probably get RGB/composite output if you want.

I'd be down for that but FPGA's are fairly expensive.
